Banana Pudding Cookies

This is a great recipe I found over on Two Peas and Their Pod. Take the link over there and look around. They have some great recipes!!

INGREDIENTS:


1 cup unsalted butter, at room temperature
3/4 cup brown sugar
1/4 cup granulated sugar
1 (3.4 oz) pkg banana cream flavor instant pudding mix
2 large eggs
1 tsp vanilla extract
2 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 cup chopped vanilla wafer cookies
1 1/2 cups white chocolate chips

Preheat oven to 350 degrees. Line baking sheets with parchment paper for easy cleanup! Using a mixer, cream together the butter and sugars.


Add pudding mix, eggs and vanilla. While that mixes, combine flour, baking soda and salt in a separate bowl.


Add in the dry mix until just combined.


Stir in the chopped wafers and chips and scoop onto baking sheet.


Bake for 10 minutes, or until slightly golden on the edges.


Transfer cookies to a cooling rack to cool completely and enjoy!
