Salisbury Steak 3

I have two different Salisbury Steak recipes on this blog already. I love the easy patties in this one and the sauce from this one. Since finding the second recipe I have tended to make a combination of the two so I thought I would blog that version!

THE INGREDIENTS FOR THE PATTIES


 1 cup of milk
28 saltine crackers
4 TBSP dried minced onion
4 tsp dried parsley flakes
2 pounds lean ground beef

THE INGREDIENTS FOR THE SAUCE





1 can condensed French onion soup
2 TBSP flour (I use seasoned flour)
1/2 cup ketchup
4-6 tsp Worcestershire sauce
1 tsp ground mustard
1/2 cup water

In a large bowl, mix the saltine, onion and parsley flakes. Add the milk and allow to soak while you make the sauce.


In a separate bowl, combine the sauce ingredients. Whisk together until flour is fully blended in.


Back to the meat! Mix the ground beef into the crackers mixture. I find the best tool for this is my hands.





Once fully mixed, I sort of divide the bowl into eighths.




Grab a section and roll it into a ball in your hands. Then flatten it out into a patty.




Place the patty into a 9x13 pan. I also like to poke a hole in the middle to help them cook through evenly.









Pour the sauce over the patties. Bake at 350 degrees for 55 minutes or until cooked through.





This is a doubled recipe of the original and it makes 8 patties. I put two in a smaller dish and bake it all at the same time. This last picture is of all 8 patties in the smaller dish. The recipe can be halved but it leaves you with half a can of condensed soup. I guess you could make half the meat mix and all the sauce and have extra sauce for potatoes!

One Pot Creamy Spaghetti

A big favorite around Chaosville is Spaghetti. Plain and simple, store bought sauce or homemade doesn't seem to make much difference to the crew here. So I don't really take note of spaghetti recipes when I see them. This one caught my eye when I saw it in an e-mail from Pillsbury, because it said one pot. So glad I kept it and made it! It's delicious, easy and always a big hit around here!

INGREDIENTS


1 pound ground beef or Italian sausage or turkey
3/4 pound uncooked spaghetti
1 (28 oz) can of crushed tomatoes with basil, undrained
32 ounces chicken broth or stock
1/2 cup heavy cream


Brown meat in a large pot and drain any grease. Add remaining ingredients to pot and stir to combine. I like to break up the noodles just a bit.


Heat to a boil and cook for 15-20 minutes or until noodles are done to your liking. Turn the noodles a few times to prevent them from sticking to the bottom of the pot. Top with Parmesan cheese, fresh basil or whatever you like. If you like things on the spicy side you can add crushed red pepper flakes with the other ingredients.



I forgot to take a picture when it was done so this one is after we had all gotten our servings. It makes plenty for my family of 5 but we usually do not have leftovers.

Salisbury Steak 2

This is my second Salisbury Steak recipe to post. I love the other one but it is full of salt due to the canned gravy it calls for. I have been looking for another one and I really love this one. I cannot remember where I found it, but I am very glad I did. 

INGREDIENTS:


1 can condensed French onion soup
1 1/2 pounds ground beef
1/2 cup dry breadcrumbs
1 egg
1/4 tsp salt
1/8 tsp black pepper
1 Tbsp all-purpose flour
1/4 cup ketchup
1-3 tsp Worchestershire sauce (to taste)
1/2 tsp ground mustard
1/4 cup water

In a large mixing bowl, add together 1/3 cup of the soup, the beef, breadcrumbs, egg, salt and pepper.


Get to work with your hands and thoroughly mix together.


Shape into 8 patties. I like to press down in the center to make it thinner there. I feel like it gets done a little quicker that way when cooking.


In a large skillet over medium high heat, brown the patties on both sides and pour off any fat. I do it in two batches.



In a small bowl, blend flour and remaining soup until smooth.


Add ketchup, water. Worchestershire and mustard.


Pour over patties in skillet.


Cover and cook for 20 minutes, stirring occasionally.



Serve with mashed potatoes and enjoy immensely!


30 Minute Mini Meatloaves

Seriously? Meatloaf? In 30 minutes? YES!!!!! That's 30 minutes start to finish, not 30 minutes cooking time! This recipe came from Betty Crocker and it is really quick and really good! I don't have pictures of the ingredients and steps, just one I took as it was ready for the oven. I will update them when I make it again! I always double the recipe so I can use the whole pound of ground pork. I also only put the ketchup topping on half of them as I love it but Jayme does not.

INGREDIENTS:

1/2 cup ketchup
2 Tbsp packed brown sugar
1 lb lean ground beef
1/2 lb ground pork
1/2 cup Bisquick mix
1/4 tsp pepper
1 small onion, chopped
1 egg

Heat oven to 450 degrees. In a small bowl, mix together the ketchup and brown sugar. Save 1/4 cup for the topping.

In a large bowl, mix together all the other ingredients along with the bulk of the ketchup mix. Use your hands!!

Spray a 9x13 dish with cooking spray. Place the meat mixture into the pan and pat it out into a 12x4 rectangle. Using your hand, cut it down the middle into two long sections. Then cut across 4-6 time to make several smaller sections. Separate so no sides are touching. Brush top with remaining ketchup mixture.


Bake 18-20 minutes until loaves are cooked through. If you have a meat thermometer, the center should read 160 or above.

Cheeseburger Skillet Pasta

Here's a great recipe from Taste of home! It's like hamburger helper without all the preservatives and salt. I always double this recipe for my family but the listed ingredients are for a single recipe size.

INGREDIENTS:


1 1/2 cups uncooked penne pasta
3/4 pound ground beef or turkey
2 Tbsp finely chopped onion
1 can diced tomatoes
2 Tbsp dill pickle relish
2 Tbsp mustard
2 Tbsp ketchup
1 tsp steak seasoning
1/4 tsp seasoned salt
3/4 cup shredded cheese

Cook pasta according to package directions. While pasta cooks, brown meat and onion over medium heat until no longer pink.


Add seasonings and condiments to a small bowl and blend together.


Add tomatoes to meat and stir.


Add pasta and seasonings blend. Bring to a boil. Reduce heat and simmer for 5 minutes.


Top with cheese and remove from heat.


Put lid on skillet and allow cheese to melt.


Serve to hungry minions.

Hamburger Noodle Casserole

Challenge recipe #4! We liked this one okay. I have another similar recipe called Hamburger Noodle Bake that we like a little better. I think I will try to meld the two together. This one needed more garlic for sure, maybe some onion. The cheese mixture was very good in my opinion, but Jayme liked the other one better. This one comes from my Taste of Home Most Requested Recipes cookbook.

The Ingredients


5 cups uncooked egg noodles
1 1/2 pounds lean ground beef
2 garlic cloves
3 (8 oz) cans tomato sauce
1/2 tsp sugar
1/2 tsp salt
1/8 tsp pepper
1 (8 oz) package cream cheese
1 cup ricotta cheese
1/4 cup sour cream
3 green onions, thinly sliced, divided (I skipped these)**
2/3 cup shredded cheese (I skipped)

Cook the noodles according to their directions while you brown the ground beef and garlic.


When meat is no longer pink, add the tomato sauce, salt, sugar and pepper. Heat through and add the cooked noodles. Stir to combine.


In a small bowl, beat the cream cheese, ricotta and sour cream together until smooth. Using whipped cream cheese really helps with this step, and you can't beat a pastry blender for this job! (If using the green onion, add half of them to this mix)


Spread half the noodle mixture in a 13 x 9 casserole dish. Cover with half the cheese mixture.



Add the remaining noodles to the top.


Cover and bake at 350 degrees for 30 minutes. Tell your assistant to take a break.


After the initial time period is up, sprinkle on the shredded cheese (if using) and bake uncovered for 5 to 10 more minutes to melt cheese. (Top with remaining green onions, if using)


Serve and enjoy! We sprinkled our with Parmesan cheese and everyone liked it, but as I said, it needed something. **I know I said it could use some onion and then I didn't use the ones called for but I do not like the taste of green onions (we called them "scallions" growing up) too strong for me, and bitter. Adding some diced yellow onions with the meat and garlic is what I think would help.

Italian Meatloaf

My mom has made this tasty version of meatloaf for us a few times and when she told me the recipe was on the Progresso Breadcrumbs box I had to try it out! I am not a huge meatloaf fan but this version has a subtle sweetness to it and it was fun to serve it with noodles instead of potatoes.

The Ingredients:


 1 1/2 pounds lean ground beef
1 cup milk
1 Tbsp Worcestershire sauce
1/2 tsp dried basil
1/2 tsp salt
1/2 tsp ground mustard
1/4 tsp pepper
1 clove garlic, minced
1 egg
3/4 cup dry breadcrumbs
1 small onion, chopped
1/2 cup chopped green bell pepper
1/4 cup ketchup

Heat oven to 350 degrees. Mix together all ingredients except ketchup. Shape into a loaf and place in either an ungreased 9 x 5 loaf pan or a 13 x 9 baking dish. Spread ketchup over the top.


Bake, uncovered, 1 to 1 1/4 hours or until no longer pink in the middle. If you have a meat thermometer, the center should be at least 160 degrees when done. Let stand for 5 minutes, slice and serve!

Hamburger Noodle Bake

This recipe is out of my Taste of Home Annual Recipes 2011 cookbook. It was listed in the chapter "cooking for One or Two" but I doubled the recipe and it worked out very well for us. The original recipe only called for 1/2 pound of meat so doubling wasn't very hard!
The Ingredients:


4 cups uncooked egg noodles
1 pound ground beef, turkey, venison or whatever else you like to use
4 Tbsp finely chopped onion
2 cans (8 oz) tomato sauce
1/2 tsp sugar
1/4 tsp salt
1/4 tsp garlic salt
Pepper to taste
1/2 cup small curd cottage cheese
4 ounces cream cheese, softened
2 Tbsp thinly sliced green onion (I skipped this)
2 Tbsp chopped green pepper
2 Tbsp sour cream
4 Tbsp grated Parmesan cheese

WHEW! That sounds like a lot and might make you think this is going to be hard or take a long time but it isn't and it doesn't!! First step, cook the noodles according to package directions. While they cook, brown the meat and onion in a large skillet until meat is no longer pink; drain. Remove from heat; stir in the tomato sauce, sugar, salt, garlic salt and pepper.


In a small bowl, mix together the cottage cheese, cream cheese, green onion, green pepper and sour cream. When the noodles are done, drain them and place half the cooked noodles in the bottom of a 2 quart baking dish (well greased please).


Spoon half the meat mixture over the noodle base.


Add the cheese mixture next. Use it all.


Follow with the remaining noodles. Spoon the rest of the meat sauce on top and sprinkle with Parmesan cheese.


Cover and bake at 350 degrees for 20 - 25 minutes or until heated through.



Enjoy! This was very good. Kind of like lasagna but not as hard to make and it had a great flavor. We will make this again and again for sure.
